| 内容記述 | Studies were made on an ascorbic acid protective factor. The experimental results indicated that glutathione is absent in the water extract. Therefore an ascorbic protective factor in garlic extract is something other than glutathione. On the other hand, factors bringing about instantanious destruction of glutathione were found in garlic; a minor fraction was heat-resistant but the major fractions were destroyed by boiling or by adding an acidic solution such as meta-phosphoric acid. | |||||||||||||||||
